Switched from a sketchbook to a tablet last March, my watercolor process got weird

I used to carry a small Moleskine everywhere and sketch with cheap brushes, then photograph the pages and fix them in Photoshop. Now I draw straight into Procreate with an Apple Pencil and it feels like the stage where I mess up moved earlier, in the layers instead of on paper. The undo button is a trap though, I spent 20 minutes tweaking a leaf on a maple tree near Portland and lost sight of the whole picture. Has anyone else felt like their art gets too perfect too fast on a tablet, and do you force yourself to do quick no-undo sketches to keep it loose?
