Question about stucco mixing after my driest batch ever

I was out in the South Valley last week doing a patch job on a rental I manage, and my stucco mix came out so dry it crumbled before I could even trowel it flat. I've mixed it by eye for years, but the humidity here was near zero and it threw everything off. I ended up adding water twice more and still had to scrape the whole section off the wall after it set wrong. That wasted about 90 minutes and a full bag of mix, which hurt because that stuff isn't cheap anymore. Now I'm second guessing my whole process, especially for summer jobs. Do you folks measure your water by weight or just go by feel, and how do you adjust when the air is bone dry like that?
