After 9 years of bread baking, I just figured out my starter was hungry this whole time

I've been feeding my sourdough starter once a day at a 1:1:1 ratio since I got it from a friend back in 2016, and my loaves always came out flat and dense no matter what I did. Last Tuesday I accidentally left it out for 14 hours before feeding it again, and that same starter tripled in size and finally gave me that open crumb I've been chasing. Was I just underfeeding it the entire decade, or is there something else about timing that I'm missing?
