Watched my sourdough starter go from smelling like gym socks to fresh bread in 11 days
I started a sourdough starter on a Tuesday about three weeks ago using just flour and water, and by day 4 it smelled so bad I almost threw the whole jar in the trash. It was like wet socks mixed with old milk, and I actually texted my friend Maria asking if I killed it. She laughed and said to just keep feeding it twice a day and wait. So I did, 50 grams of flour and 50 grams of water every morning and night, and around day 8 the smell shifted to something sour but actually pleasant. By day 11 it was doubling in size about 4 hours after each feeding and smelled like yogurt and fresh bread. I baked my first loaf yesterday and it actually rose instead of turning into a brick. So for anyone who quit a starter in week one because of the smell, how long did yours take to turn the corner?
So when you say the smell shifted around day 8, was that gradual over a couple days or did you wake up one morning and it was just different? I ask because mine is on day 5 right now and still smells like something died in there, and I keep second guessing whether it's normal funk or actual mold. Did you see any liquid pooling on top during that gross phase, because mine has a dark layer and I can't tell if I should pour it off or stir it back in. Also curious if you changed anything about your flour during those 11 days or just kept the same bag the whole time.
