Had to decide between a stock 8-inch SCT and a 6-inch newtonian for my first real scope

Pick one and move on, it's not like you're choosing a spouse. Either one will show you plenty of stars while you figure out what you really like.

That 6-inch newtonian on my dob mount showed me Saturn's rings clear as day my first time out.
