Serious question, why do amateur astro photos look better than professional ones sometimes?

I was chatting with a guy at the camera store yesterday who shoots deep sky stuff on a $2,000 rig. He said pro observatories focus on science data, not making pretty pictures. That hit different because I always thought Hubble shots were the gold standard. But seeing his raw edit of the Orion Nebula with way more color and contrast made me wonder if we value aesthetics over accuracy. Has anyone else noticed this trade off in their own editing?

That's the question right there... how much of what we call "beautiful" is just aggressive processing? I've seen guys push saturation so hard the stars look radioactive, and people eat it up. But if a pro observatory did that, astronomers would lose their minds over corrupted data. So where's the line between making it look good and lying about what's actually out there?

Buddy of mine spent 3 hours making a nebula look like cotton candy. Sold a print too.
