A bakery in Portland changed my mind about sourdough

I always thought sourdough was too tangy and not worth the hype. Then I tried a loaf from Tabor Bread in Portland that had this subtle citrus note I didn't know was possible. Has anyone else had a bakery completely flip your opinion on a type of bread?

Totally agree with @jason_fisher4 on this one. Honestly, I was the same way about sourdough for years. Thought it was just that same overpowering tang every time. Tabor Bread is on another level though. That citrus note completely changed my mind, like sourdough can actually be subtle and complex. It's wild how one good bakery can flip your whole opinion on something you thought you hated.
