A customer asked me to scrape my stand mixer and I still think about it

Last fall at the farmer's market in Portland, this older guy watched me knead dough for about 5 minutes. He finally walked up and said, 'You use too much flour on the counter, you're ruining the texture.' I laughed it off, but then he showed me his trick of using a bench scraper to fold the dough instead of adding flour. I tried it the next day and honestly, my bread came out lighter and less tough. Has anyone else had a random stranger's tip actually change how they bake for the better?

Oh wow, that’s such a great story! So the guy just watched you for 5 minutes before saying anything? Did he seem like a pro baker himself, or was he just some random dude with strong opinions about bread? I gotta ask, did you feel a little embarrassed at the time, or were you mostly curious about his method? Because I feel like I’d be half annoyed and half fascinated if a stranger critiqued my technique like that.
