Had a wedding cake order for 200 people fall through on Tuesday morning

The client canceled by text, which left me with 15 pounds of fondant and a ton of buttercream already made. I ended up donating the finished tiers to a local shelter's volunteer lunch, which felt good, but man, what a sudden shift in the week. How do you all handle last-minute cancellations for big orders?

Donating it was a class move, jordank52, but is it really that brutal? People make bigger mistakes every day and just move on. It feels like we're treating a simple error like some huge tragedy.

My friend Sarah runs a catering company and had a 150-person corporate lunch cancel with four hours notice last fall. She was stuck with all this grilled salmon and her staff already on the clock. She ended up boxing it all up and her delivery driver dropped it at a fire station, which totally made their day. It's a huge hit to the budget but you just have to find a way to make something good from it, like you and jordank52 said. That sudden empty feeling in the kitchen is the worst part.
