I finally asked a regular why she stopped buying my sourdough
She said the crust was getting too hard for her to cut... she's got arthritis in her hands. I'd been so focused on that perfect 'ear' and crackle, I didn't think about who was actually eating it. Anyone else had to adjust a signature bake for accessibility?
