I thought sourdough starters were just a fad for a long time.

Back in 2019, a friend in Portland gave me a jar of her starter and I almost tossed it. I tried it once, got a flat loaf, and gave up. What changed my mind was a failed yeast run during the pandemic when I had no other option. That starter, named 'Bubbles', made the best loaf I'd ever baked after I finally learned to feed it right. Has anyone else had a starter that just clicked after a rough start?

@robert275 got it right with morning and night feedings. Small meals at 7am and 7pm. Kept portion size to a quarter cup each time. Bubbles was a stubborn eater at first. Took two weeks to settle into a rhythm. Then he started gaining weight properly.
