Instant yeast vs active dry is not even a fair fight anymore
I used active dry yeast for 10 years because that's what my grandma used. Switched to instant yeast last month for a sourdough loaf and got way better rise in half the time. Has anyone else made the swap and noticed a big difference?

My third batch of instant yeast bloomed so hard it looked like a science fair volcano gone wrong, foam everywhere on my counter. I thought I had messed up too, @hollym12, until I realized I was using water straight from the tap that had enough chlorine to kill it. My advice is to let water sit out for 10 minutes or use bottled water, that fixed the dead batch problem for me. Now I get those perfect open crumb loaves every time and I can't even remember why I stuck with active dry for so long. The instant stuff is just way more forgiving once you get the water right, and it cuts the rising time by like an hour.

My active dry never lets me down but I killed three batches of instant before getting one to rise right.
