Old timer at the bakery taught me a trick about butter temperature
I was working at a shop in Nashville last summer and a retiree came in during a slow Tuesday morning. He watched me struggle with creaming butter that was still too cold. He said, "Son, press your thumb into the stick and if it leaves a dent without crumbling, you're ready." I tried it right there and my cookies came out way better than usual. Has anyone else gotten a simple tip from a customer that changed how you bake?

That "thumb dent" trick is solid. Reminds me of a time I was at a friend's house and her grandma showed me how to test pie dough by squeezing a handful. If it holds together like wet sand, you're good. If it crumbles, add more water. Sounds simple but I had been making tough crusts for years before that. She said most baking problems come from not trusting your hands and relying on timers too much. Now I always check dough by feel before I trust what the recipe says.
