Spent $120 on a lame digital scale and it fixed my bread more than the $400 one did
I know everyone says buy a good balance scale for baking, but I grabbed a $120 digital one at a restaurant supply store in Dallas last month and my loaves have been way more consistent than with the $400 balance beam I borrowed for a year. The cheap one reads to 0.1g and it's fast enough for yeast, and I honestly think the fancy one was just too slow to settle and I was always guessing. Am I crazy for thinking a cheaper scale is actually better for small batches?
