Spent 3 months refusing to bake in a Dutch oven, then my sister in Reno made one loaf in hers and I felt like a fool
I bake sourdough about twice a week and I kept seeing people say you have to use a Dutch oven, and I figured it was just a gimmick to sell cookware. My cheap sheet pan and a spray bottle of water always gave me a decent crust, so why spend money on a heavy pot? Then my sister in Reno baked a boule in hers over the holidays and the crust shattered when I tapped it, while mine always came out kind of chewy on the outside. She let me borrow it for a weekend and I ran two loaves side by side, same starter, same flour, and the Dutch oven one had a way better rise and an ear that actually opened up. The steam gets trapped in there and the lid does something my spray bottle never could. I still use the sheet pan for sandwich loaves but I finally bought my own pot last month. Has anyone else held out on a basic tool way too long, and what finally made you cave?
A sheet pan with a tray of ice cubes and a foil tent does the same thing as a Dutch oven, you just have to actually watch it instead of trusting a lid to do the work for you. Everyone acts like you need a $300 pot to get an ear but people were baking great bread for centuries without one.
