That 50 pound bag of bread flour was way off on my scale at home

I was portioning out dough for my usual Saturday bake and my kitchen scale said the bag was 48.6 pounds instead of 50. I figured my scale was just cheap junk so I took the bag to my buddy's shop who bakes commercial. He weighed it on his certified scale and it was 48.4 pounds. That means every batch I made from that bag had slightly less flour than I thought for weeks. I contacted the mill directly and they admitted their packaging line had a calibration issue on a certain date code. Anyone else ever bother weighing a full bag to see if it matches the label?

Weigh every bag you get for a few weeks after that date code to be sure they fixed it. I'd also zero out your scale with a known weight like a gallon of water (8.34 lbs) to double check your equipment. A 1.5 pound shortfall will throw off hydration ratios and ruin your crumb structure if you don't adjust.

That 8.34 lb gallon of water trick only works at 39.2°F. If your water is room temp the weight drops measurably and you'll introduce a new error.
