Thought scoring bread was just for looks until a baker in Portland showed me the bottom crust
I figured the slash on top was decoration, but she said it controls where the loaf opens so the bottom doesn't blow out. Anyone else changed their mind on something they thought was purely cosmetic?
Wait, so the bottom can actually blow out if you don't score it? I read somewhere that scoring is basically letting the steam escape in a controlled spot so the loaf doesn't tear wherever it wants. Never thought about the bottom being part of that though.
