Thought sourdough starter was just flour and water hype, then my neighbor handed me a jar from 2009
I always figured people were being dramatic about keeping a starter alive for years, like it was some kind of pet. Then my neighbor Barb handed me a jar she said she'd been feeding since 2009, and I made a boule with it that rose higher in 4 hours than anything I'd baked with dry yeast. The crumb was open in a way I've never gotten before, and it tasted like actual bread instead of just... bread-shaped. I'm now 3 feedings deep into keeping my own jar going and I feel like an idiot for rolling my eyes all those years. Does anyone here actually name their starter, or is that just a thing people do on the internet?
