A judge at the Memphis in May contest told me my ribs were 'too perfect'
He said they looked like they came from a factory, not a pit. The bark was even, the color was textbook, but they lacked soul. I stopped trimming every single rib to exact specs and started leaving a bit more fat and variation. Now I get more comments about flavor than looks. Anyone else get told their barbecue was too neat?

Memphis judges are known for being tough, but "too perfect" feels like nitpicking. It's just barbecue, not art school. If the flavor is good, who cares if the bark looks like it came from a ruler?
