A judge told me my ribs were 'mush' and it stung but he was right
I entered a small contest in Kansas City last year and got my score sheets back. One judge wrote 'texture like pulled pork, not ribs' and gave me a 4 on taste. I was mad for a week, but then I checked my logs. I was cooking at 275 degrees for 5 hours, which was way too long for baby backs. I dropped my temp to 225 and cut the time to 3.5 hours, wrapping after 2. The bark got better and the bite was perfect, they pulled clean off the bone. Has anyone else had a judge's harsh note actually fix a big flaw in their method?
