Can we talk about the push for super clean smoke on brisket?
A judge at the Memphis in May contest told me my smoke ring was 'too perfect' and the flavor was lacking, so I started using less refined wood chunks for a dirtier burn. Anyone else think we focus too much on looks over taste sometimes?

That Memphis judge nailed it. We've all seen those pictures of a bright pink ring with zero flavor behind it. The smoke ring is just a chemical reaction, not a sign of good barbecue.
