Choosing between a pellet smoker and a stick burner for my first competition
I had to pick between a Traeger Ironwood pellet grill and a basic offset stick burner for a small local contest in Austin. Went with the stick burner because I wanted that real wood smoke flavor everyone talks about. It was way harder than I thought... keeping the fire steady at 225 for 16 hours on a brisket took all my focus. The bark came out amazing, but I think I messed up the wrap timing because the flat was a little dry. Anyone have a good rule for when to wrap during a long cook like that?

My first brisket on a stick burner looked like a charcoal briquette, so maybe don't ask me about timing.
