Chose a stick burner over a pellet smoker for my first comp last month

I was dead set on a pellet smoker for the convenience at the Kansas City Royal. But after talking to a pitmaster named Hank at a practice cook, I went with an offset stick burner instead. The temp swings were brutal, I spent 14 hours feeding that thing every 45 minutes. But the brisket got a deep smoke ring and a 7th place call. Has anyone else made the switch and regretted the extra work?

Nobody really talks about how the stick burner teaches you to read your fire better than a pellet smoker ever could. After a few comps with that offset, you start knowing exactly what a clean fire looks like and how to adjust for wind or humidity. That skill carries over to everything else you cook at home, even if you switch back to a pellet grill later. The pellet smoker just handles all the thinking for you, but you lose that gut feeling for the cook. A 7th place call with a deep smoke ring proves your choice was right for that competition environment, even if your sleep schedule hated it.

38 degrees and 25 mph winds at my last comp taught me more about fire management than any YouTube video ever could. I keep a cheap notebook with temp swings, wind direction, and humidity for each cook. That data is gold when you're trying to replicate a good run. Pellet grills are fine for weekday butts, nothing beats that gut feeling from running a real fire.
