Figured spritzing ribs was just for show until a judge at the KCBS event in Norman handed me his scorecard
I always thought misting was something guys did for the camera, but watching moisture pull a rack through the stall at 3 hours changed my mind. Now I keep a cheap spray bottle of apple juice and cider vinegar on the shelf next to the pit and it earns its spot. Anyone else spraying during the cook or do you just let the fat do the work?
