Finally stopped fighting my WSM at 3am last night

Been doing overnight cooks for years but always had to babysit the temp every hour. Tried the Minion method with the ring half full of unlit charcoal and a dozen lit on top, held steady at 225 for 8 hours without touching it once. Anyone else have a technique that felt like cheating when you first tried it?

Huh, that's interesting you had the opposite experience. For me, the trick was getting the timing right. I was messing up by watering too late in the day, which left the leaves wet overnight and caused mold. Once I switched to early morning watering and made sure the soil dried out between waterings, things turned around pretty fast. Did you try changing up your watering schedule when it didn't work for you?
