I switched to wrapping my ribs in butcher paper instead of foil halfway through my last cook
The bark stayed way more firm and didn't get that mushy texture, but the meat was still plenty tender after about 3 more hours on the smoker, so has anyone else tried this with baby backs?

Totally agree, switched to paper for my last rack and got the same great bark without drying them out.

Yo @spencer707 you can totally go shorter on the wrap time. I've done ribs at 275 for about 5 hours total and only wrapped the last 2.5 in paper, came out perfect every time. Brooke's right about the bark staying on too, foil always made mine soggy lol.

Wait, you only wrapped them for the last three hours? I always thought you had to wrap ribs for way longer to get them tender. How hot was your smoker running to get them done in that time?
