My offset smoker was lying to me for 6 months
Turns out the thermometer on the lid was reading 50 degrees hotter than the grate level. Last Sunday I got a cheap probe on a whim and my brisket finally cooked right in Austin. Anyone else catch their stock thermometer being way off?

50 degrees is a lot, but grill center probe is the real truth anyway.
