My old offset smoker was running 50 degrees too hot last week, and I found the fix in a weird spot.

I was trying to smoke a pork shoulder in my backyard, and the temp gauge just kept climbing no matter how little wood I added. After an hour of fussing, I checked the seal around the firebox door and found a big gap I'd never noticed, so I stuffed it with some foil. Has anyone else had a simple leak cause that much trouble with their fire management?

Ever check the chimney damper? Mine was stuck open once and caused the same wild temp swings (drove me nuts until I found it).

That's a solid tip. A stuck damper basically turns your chimney into a giant vacuum hose pulling warm air right out of the room. Could also be a warped or rusted seal that isn't closing all the way, even if the handle moves.
