Old timer at the county fair told me my smoking times were all wrong
Last October at the Kern County fair, this retired pitmaster walked up to my booth and sniffed my brisket like he was judging a wine. He pointed at my 12 hour smoke log and said, "Son, that thermometer is lying to you, the meat knows when it's done." I laughed it off until I tried his trick, pulling a 14 pounder off at 198 instead of my usual 203, and it was the juiciest thing I ever made. He never gave me his name, just a business card with a phone number that's dead now. Have any of you ever had a stranger's random advice actually beat your whole system?

Quit overthinking it, man. A one degree difference and a dead phone number doesn't prove anything. You probably just got lucky with that particular piece of meat.
