PSA: I started spritzing my pork butt with apple juice every 45 minutes and it fixed my bark
Last Saturday I smoked two 8 pound butts on my offset in the backyard, and the first one came out with a dry, crusty bark that fell apart when I sliced it. A guy at the local BBQ supply shop in Tulsa told me to stop mopping and just spritz with plain apple juice every 45 minutes instead. I tried it on the second butt and the bark set up dark and shiny without getting mushy or bitter. The juice kept the surface from drying out without washing off the rub, and I pulled it at 203 internal after about 9 hours. Has anyone else messed with spritzing vs mopping, or am I just late to this?
