PSA: That advice from Aaron Franklin about wrapping in butcher paper ruined my brisket

I followed his exact method from his book last Saturday for a 14-pound packer, and the bark came out soggy because my smoker runs hotter on the left side, and he never mentioned checking for hot spots first, has anyone else found his stuff overrated for home rigs?

Overrated? His method is gospel. Maybe check your rig before blaming the man.

Call him overrated all you want but the guy literally wrote the book on pressure mapping. Maybe give his white papers a read before writing him off.
