Spent 3 hours chasing a temp spike on my offset that turned out to be a loose stack pin
Last Saturday I fired up the offset for a brisket and the cook chamber kept creeping up 25 to 30 degrees hotter than normal no matter what I did with the intake. I messed with the firebox door, swapped charcoal, checked my thermometer twice, and even moved the smoker out of the wind thinking that was it. Three hours in, on a hunch, I wiggled the exhaust stack and the whole thing wobbled because the pin holding it had backed out somewhere along the way. Popped it back in and tightened it down, and temps settled within 10 minutes. My neighbor came over and said the smoke had been leaking out the bottom of the stack the whole time and he figured that was just how it ran. Any of you run into a leaky stack throwing off your temps like that?
Did you ever figure out how long that pin had been backing out before you caught it? That is a sneaky one, and I feel for you because three hours of chasing temps on a brisket cook is brutal. The part that gets me is your neighbor watching smoke leak the whole time and thinking it was normal, that would drive me nuts. Good on you for trusting your gut and wiggling the stack, that hunch saved the cook. Glad it settled down in 10 minutes once you tightened it up.
