Stopped at a roadside stand outside Lockhart and the pitmaster was running his fire upside down
I pulled off the highway near Lockhart last Saturday to grab a chopped beef sandwich at this little stand with two offset smokers in the gravel. The guy running it had his fire basket raised up high and the coals sitting on a grate well above the bottom of the cook chamber. He told me it pulls air across the coals instead of choking them, and his temps held at 250 for six hours without him touching the vents. I've always done the standard low coal bed with a water pan, so now I'm wondering if I've been fighting my fire for nothing. Has anyone here tried the raised basket setup on an offset and did it really make temp control easier?
