That Saturday my brisket hit 203 in 4 hours and I almost served sawdust
Last weekend at the Franklin County fairgrounds I fired up my offset and the temp gauge lied bad, that thing read 250 but my probe showed 340 and I caught it right before pulling. Anyone else trust a $15 thermometer over their hand feel and get burned, or is it just me being cheap?

That "trust your hand feel" line gets me every time. I've been there, pulled a pork shoulder an hour early because the cheap probe was off by 25 degrees. Honestly, I'd rather dry out one brisket than eat safety risk with a lying thermometer. Spend the extra money, or just calibrate with boiling water, it takes five minutes.
