Unpopular opinion: Franklin's brisket is overrated compared to a little spot in Lockhart

I drove 3 hours to try Franklin's last Saturday and the line was insane, but the brisket was just okay. Then I stopped at Kreuz Market in Lockhart on the way back and their fatty brisket had way better smoke flavor. Am I crazy for thinking the hype doesn't match the meat, or did I just get a bad day at Franklin's?

Respect that opinion but I gotta disagree a little. Aaron Franklin's brisket has a perfect peppery crust and that buttery fat rendering I haven't found anywhere else, even in Lockhart. Maybe you hit them on an off day but for me, the hype is REAL when the bark snaps just right.

Wait, you're telling me that crust on Franklin's brisket is actually peppery? Like, all the time? Because every time I've been there it's just been a thick black layer that tastes burnt. I've had it three different times, twice from the truck and once at the restaurant. Bark was tough, not snappy. Fat was greasy, not buttery. People keep telling me I'm crazy but I swear it's hit or miss. Maybe I just have bad luck, but I'm not convinced the hype is real.
