Update: I quit wrapping my briskets in foil and my bark finally stopped steaming off
Everyone on here swears foil is the only way to push through the stall and I bought into it for 3 straight cooks. Last Saturday I was doing two 14 pound packers on my offset in Fort Worth and said screw it, no wrap at all, just let them ride at 275. The flat took almost 9 hours but when I sliced it that bark was almost black and crunchy in a way foil never gave me. Only downside is the cook runs longer and I had to feed splits way more often. Anyone else flat out skip the wrap or am I just late to this?
