Update: I wrapped my pork butt in peach paper at 165 and it cut my cook time by almost 3 hours
I usually run two butts on my 22 inch WSM for family get togethers and I always plan on 12 hours, which means getting up at 3am. Last Saturday I decided to wrap at 165 instead of letting it ride all the way, mostly because I was tired of babysitting the fire. The first one hit 203 in about 8 hours, and the second was done 40 minutes later, which I did not expect at all. The bark came out softer than I like but the meat was just as juicy, so I guess I traded texture for sleep. For you folks who wrap, do you add anything to the paper or just go bare?
