Question about organizing a game night for new players

I set up a simple game of Catan for some friends who never play board games, and I skipped the usual long rule explanation. We just started playing and I explained as we went. They picked it up way faster and actually had fun. What's your go-to game for introducing people to the hobby?

Nice! That's the best way to do it for sure. I always go with Ticket to Ride for new folks. The rules are simple but it still feels like a real game.
