Old way: glued spines first. New way: sew everything. What's your process?

Ive been messing around with a hybrid approach lately where i glue the first and last sections but sew everything in between. Did a 300 page book last week and the middle sections feel way flatter compared to old spine glued method. The glue holds the ends tight while the sewing lets the center breathe. Not sure if thats a standard thing or just me being lazy lol.
