Last month I was cleaning out my fridge and tossed a half-full jar of pickle juice, and my neighbor Mildred saw it from her porch and hollered over, 'You just threw away free salad dressing and a marinating base, kid.' She then showed me how she uses the brine to tenderize cheap pork chops and whisk it with oil for a no-cost vinaigrette, which honestly blew my mind because I'd never thought past the pickles. Man, that reminds me of the time I did the same thing with a chicken carcass from our Sunday roast. I just chucked it in a big pot with some onions and carrots, let it simmer all day on low. Honestly, the house smelled incredible and the broth came out way richer than anything from a store. I froze it in old yogurt tubs and used it for months after, best soup base ever.
