Turns out I was sharpening my $3 thrift store knives backwards for 11 years
The tip-off came when my neighbor's 6 year old asked why I was scraping the blade against the stone like a butter knife, so now I'm wondering if anyone else grew up learning kitchen skills from a dad who just made stuff up.
