Cooked dried beans for the first time instead of canned...

I figured I'd save like 50 cents but honestly the texture was way better and I got 3 meals out of a $2 bag of pintos. Has anyone else made the switch and noticed a difference with simmer times?

Hang on though - those pintos probably needed more like 2-3 hours simmering, not the hour you might see on some bags, especially if they're older. A little baking soda in the soak water can help soften them up faster too.

Whoa, wait... baking soda in the soak water? I never heard of that before. Does it mess with the taste at all? I always just soak them overnight and hope for the best. My grandma would probably roll over in her grave if she saw me putting baking soda in with the beans, she was pretty strict about her methods. I gotta try that next time though, anything that cuts down the simmer time sounds good to me.
