Hit $50 a week on groceries and thought I was crazy until I actually did it

I always figured meal prepping for cheap meant eating boring stuff like plain rice and beans every night. But last month I set a hard goal of $50 a week for one person and actually hit it on the nose. I started bulk cooking on Sundays with whatever was on sale at Aldi near me in Nashville. What convinced me it works was a lentil soup with carrots and onions that came out to $1.50 per serving and tasted better than most takeout. Has anyone else surprised themselves with a number they thought was impossible?

Have you tried stretching it further by using frozen veggies instead of fresh ones?
