Hit $50 in my grocery budget two weeks early and had to stretch a bag of rice and frozen spinach for 5 days
Had a slow month with side gigs and blew through my $200 monthly food fund by the 15th. Anyone else find themselves doing weird math with lentils just to make it to payday?

Just made "elephant ear" spinach wraps for three days straight. Never again.

Three days of elephant ear spinach wraps sounds like a solid meal prep win to me. I made a batch of twelve back in April and froze half of them, still got two left in the freezer that taste just fine when I reheat them in a dry pan. You just gotta spread the fillings thinner so the wrap stays crispy on the edges instead of turning into a soggy mess by day two. Maybe try toasting them in the oven at 375 for five minutes next time, that crisps up the spinach leaf real nice and keeps the texture interesting.
