I always threw away my celery leaves until a neighbor stopped me last Tuesday
She asked why I was tossing the best part and showed me how to chop them up for soups and stir fries. Now I save like $2 a week on herbs by using those leaves instead. Anyone else been sleeping on veggie scraps they could be using?

I actually read somewhere that celery leaves have like three times more calcium than the stalks themselves, which blew my mind because I was totally that person just chucking them in the compost without a second thought. My neighbor (bless her heart) also clued me into using broccoli stems the same way - just peel the tough outer layer and dice them up fine for fried rice or even roasted with olive oil and salt. Carrot tops are another one I used to toss, but now I blend them into pesto with basil and walnuts, and it's honestly pretty great. Potato peels too, just scrub them real good and bake them crispy with some paprika for a cheap snack. Feels like we're all out here learning stuff that past generations just knew, you know?

Right, so are we all just admitting we've been kitchen idiots this whole time while our grandmas are up in heaven shaking their heads at us? I bet my nana is looking down like "I told you to eat the beet greens, Stell, but nooo you had to be fancy with your kale". I'm honestly just mad about all the free snacks I've been throwing away for years, like those potato peels sound amazing and I've been treating them like garbage. My compost bin is probably going to start a petition to get me to stop neglecting poor celery leaves. Feels like we're all just slowly rediscovering cooking tips that were probably printed on a rock somewhere.
