I used to toss leftover veggies in the trash every Sunday night

For years I'd buy a bag of carrots and a head of celery for a stew, then throw away whatever was left after 5 days. That changed when my neighbor saw me chucking a half-used onion and said "you know you can freeze that stuff right?" Now I chop everything the same day I buy it and toss it in a freezer bag. Last month I pulled out a bag from 3 months ago and made a solid stock - saved me at least $8 on that meal. Anyone else do this or am I late to the party?

Freezing onions works way better than I expected too but how do you deal with the texture when you thaw them for stuff like salads?
