My weekend experiment with rice and beans for the whole week

I cooked a big pot of rice and beans to save money, but now I'm eating the same thing every day. Some folks say variety keeps meals interesting, others stick with one cheap dish to stretch their budget. Where do you stand on this?

Yeah but eating the same thing every day sounds awful even to save cash. The trick is changing up your toppings or seasonings so it feels different. Throw some fried eggs on it one day, add salsa and cheese the next, mix in whatever cheap veggies are on sale. That way you still stretch your budget without going crazy from boredom.

Totally get what laura214 means about changing up the toppings. I used to be all about the "just power through it" mindset, eating the exact same meal until it was gone. But man, that gets old fast and makes sticking to a budget feel like a punishment. What changed for me was keeping a couple cheap extras around, like a bag of frozen corn or a jar of spices. Suddenly that big pot of beans feels like three or four different meals, and I don't dread eating it by Thursday. It's the difference between saving money and actually feeling good about what you're eating.
