The day I quit trying to make fancy risotto on a Tuesday night

I used to spend an hour stirring arborio rice for dinner, then realized a $2 box of instant rice plus some frozen peas and an egg was just as filling. Now I save that 45 minutes for things I actually enjoy, like not standing at the stove. Anyone else ditch a complicated recipe for something that takes 10 minutes?

Actually I gotta push back a little on the "presto rice" thing, because there's a middle ground here that people sleep on. Parboiled rice, the kind in the orange box, takes like 20 minutes and comes out way better than instant without needing to babysit it like risotto. You just boil water, dump it in, cover it, and walk away until the timer goes off. I get not wanting to stand there stirring for an hour, but the texture difference between instant and something that actually has a little chew is night and day. Frozen peas and an egg though? Yeah that's a solid move no matter what rice you're using.

Man that's the exact kind of cooking I've been doing lately too. Used to follow those blogs that make everything look like a 5 star restaurant meal, then one night I just threw some canned black beans and shredded cheese on tortilla chips and called it dinner. Felt like a cheat code honestly - now my weekday cooking is basically "can I make this in the microwave or a single skillet." Presto rice and frozen veggies is a legit dinner, screw that fancy stuff.
