Trying to make a decent lentil soup without a recipe cost me three hours and two failed pots

My first good lentil soup came from a basic recipe on the back of a bag. Having that simple guide for water and spice amounts builds your confidence for later experiments. Now I can tweak it freely, but I still start with a framework.

Totally agree! That bag recipe method is the best way to learn. My go-to chili for years was just the basic one from a can of tomato sauce. Once you get the hang of the simple version, you start adding a dash of smoked paprika or a spoonful of cocoa powder. Now I never make it the same way twice, but I always check that old can label first.
