My cast iron cornbread came out black on the bottom and raw in the middle, and I blame the internet
I tried baking cornbread in my cast iron skillet at 450 degrees like every recipe says, and after 20 minutes the bottom was pure charcoal while the middle was still wet batter. My smoke alarm went off twice and my wife opened every window in the house even though it was 28 degrees outside. I did some digging and figured out my oven runs about 50 degrees hot, which I never knew because I mostly make casseroles that don't care. So the pan was way past smoking temp before the batter even set, and the middle never had a chance. Now I put an oven thermometer on the rack and preheat the skillet at 400 instead, and the last batch came out perfect with a crispy edge. Does anyone else have an oven that lies about its temp, or is it just mine?
How did you figure out the oven was running hot, did you test it with a thermometer or just guess after the cornbread failed? I'm curious because mine browns stuff way too fast on top and I've never bothered checking.
